Tasty Tuesday: Three Cheese Turkey Manicotti

We had this again last night-yum.

12 uncooked manicotti shells
1 lb. ground turkey
1 large sweet onion, choppped
1 jar three cheese spaghetti sauce
2 t sugar
2 tsp italian seasoning
1 tsp. onion powder
1 tsp garlic powder
2 cups shredded cheddar-Monterey Jack cheese
1 carton (15 oz) ricotta cheese
1/2 c grated Parmesan cheese, divided
1 egg

Cook manicotti according to package directions. Meanwhile in a large skillet, cook turkey and onion over medium heat until meat is no longer pink; drain. Stir in spag. sauce, sugar, and seasonings. Place 1 cup of meat sauce in a greased 9x13 baking dish.

Drain manicotti. In a large bowl, combine the cheeses and egg (reserve 1/4 c parm. cheese). Stuff into manicotti shells (I use a large plastic bag with the end cut off--then squeeze into shells). Place shells over meat sauce. Top with remaining sauce and sprinkle with remaining parm. cheese. Cover and bake 350 for 35-40 min.
